    Hey y’all.. Finally got around to experimenting with Acorn flour in the realm of baking.. A chocolate-cinnamon loaf.. Turned out great!.. Recipe and photos below.. 🙂

        It was really good.. Moist and light and fluffy and not dense.. the leavening gave it good poof action.. and it was smooth, not gritty.. And the acorn flavor was quite pronounced as well.. that surprised me.. I’ve simmered roasted acorns to make “coffee”, but it’s a light “nut water” flavor, not very intense.. I thought it might get lost in this loaf, but it didn’t.. And, so many ways of doing these and variations that could be done.. Next year I’m gonna go for a savory loaf with mostly acorn flour, see how that works — just acorn by itself and maybe some other things for punctuation, like nuts n seeds.. that might actually be a really good vehicle for dried fruits — in that case a very slightly sweet loaf.. Options.. 🙂

    We just hosted a wild food potluck for Kate’s bday a couple weeks back. This would have been a great addition to an amazing spread of food. I wrote down some of the dishes shared, but I don’t have any pictures. Kate was amazing in the kitchen, making dock seed crackers, cinnamon raisin dock seed bread, wild turkey carnitas, venison roast, lentils with cow parsnip seeds, chewy black walnuts squares, sweet fern shortbread cookies, acorn-maple torte, hickory nut milk ice cream, bee balm maple sap tea, hawthorn cordial, and sumac-aid! Then, guests brought prickly pear jello, venison liver pate, garlic mustard pesto, wild leek pesto, fermented venison ribs, lotus tubers, farro with nettles, wild mushroom soup, and hickory pecan pie with acorn crust!

    All so delicious! Wild food potlucks are the best! … Thanks for sharing, Kev!

      Oh good lord, all of those sound phenomenal!.. Love all those applications of seeds (I’ve never had dock seeds).. and Hickory nut ice cream?!.. and Black Walnut squares?!.. sweet fern cookies?.. maple sap tea?.. and I do love me some Sumac berries.. y’all got heaven goin’ on over there.. 😊
